My Kind of Mojito

Overview

One of my all-time favorite summer drinks is the Mojito. I live a couple of blocks from a specialty market here in Seattle called Metropolitan Market. This past summer they had some mint bouquets for sale in the floral department. I love when inspiration strikes at these moments in life. It was a warm summer day in Seattle and I see this mint bouquet and automatically think of a mojito. My recipe is a little tweaked and a little stronger. I love my drinks that way because as the ice melts you can continue to enjoy it on that warm summer day.

Serves 1


Ingredients

  • 8 mint leafs

  • 2 limes, Juiced

  • 2 shots of rum

  • 1 tablespoon of dark agave sweetener. You could also use regular agave if thats all you got.

  • Ice, traditionally you would use crushed but cubed works just as well.

  • Club Soda


Instructions

Muddle 8 mint leafs in a martini shaker with the juice of 1 1/2 limes. Save the other half of lime for garnish.

Add 2 shots of rum to the shaker with 1 tablespoon of agave sweetener and Ice. Shake vigorously.

Pour shaker into a tall tumbler and top off with club soda. Garnish with a couple sprigs of mint and a lime wheel.
