Arugula Breakfast Salad for Alicia
Overview
This breakfast salad has become a staple of my cousin Alicia and me when we’re together. I first made this years ago when I was visiting her one summer in Tacoma. It was a favorite salad from my boss Mary McDonald. We used to make it all the time at her house for dinners. While visiting Alicia we wanted something light, healthy, and balanced for breakfast. I thought of Mary’s salad and just throwing a fried egg on top and having it with a slice of buttered sourdough toast. She loved the salad so much she now asks for it almost every time I am over on the weekends.

Ingredients
2 hand fulls of arugula, washed and lightly chopped
1 cup cherry tomatoes
1 lemon, juiced
1/2 cup extra virgin olive oil, plus 2 teaspoons for skillet
1 teaspoon salt, plus a pinch
1 teaspoon pepper, plus a pinch
1/2 cup grated or shredded parmesan cheese
2 eggs over easy
1 slice of your favorite toast with butter

Get about 2 heaping handfuls of arugula. Wash and lightly pat dry with a paper towel. Lightly chop the arugula and add to a salad bowl. Cut cherry tomatoes in half and add to bowl.

Grab a bowl and add olive oil, juiced lemon, and salt. Whisk together and add it to your salad bowl and toss. Once your greens and tomatoes are coated nicely add the parmesan cheese. Set aside.

Heat a nonstick skillet on medium-high with 2 teaspoons olive oil. Once the skillet is fully heated add your eggs to the pan and try and keep them separate so they don’t stick together. One of the hardest parts for me. Add a pinch of salt and pepper to each egg. Let the egg cook for 3-4 minutes. Flip eggs and turn off the heat and let sit for 1-2 minutes.
*You could also do over medium or over well depending on your preference. In this recipe in particularly love it with over-easy because the egg yolk goes into the salad and adds depth to the dressing.

Put toast in the toaster and the meantime plate your salads. Add salad between both plates and add a fried egg on top. Butter your toast, cut in half, and add to the side of the plate.
Enjoy with your favorite cup of coffee, juice, or mimosa!
