How to Make Diced Tomatoes

Overview

Well, I had to teach myself recently how to core and skin a tomato. I had some fresh tomatoes in the kitchen that I had to use up. The recipe I had called for canned. This day in particular there was quite the rainstorm here in Seattle and I wasn’t about to walk to the store. I will tell you though after researching and doing it, it was incredibly easy. Boil for a minute put in a cold water bath, peel back, seed and dice. If you have tomatoes in your garden that need to be used up as the seasons change this is a great way to save and freeze them too! I think that if you can make anything fresh then do it. Whole vegetables without any canned additives are healthier.


Ingredients

  • Tomatoes

  • Water

  • Salt


Instructions

Boil water in a pot with some pinches of salt. While the water is heating start to core your tomatoes. You want to do this by cutting around the top of the tomato where the stem scar is with a paring knife. Cut a circle around the stem scar and pull out the core. I always think the core of anything being in the center but with tomatoes, it is at the top. Cut an “X” at the bottom of the tomato with your paring knife.

Once your done coring your tomatoes and your water is boiling you can drop your tomatoes in. I use a pair of tongs to prevent splashing accidents. You’ll want to keep them in their little hot tub for no more than a minute. So as soon as you drop them in I take a bowl and fill it up with cold water and leave it in the sink.

Take your tongs and drop all your tomatoes in the cold water and let them sit in the cold water for about 5 minutes. You’ll start to see their skin wrinkling up. Once the five minutes is up carefully start to peel the skin off each one and place aside on a cutting board while you finish the rest.

Cut each tomato in half and take a spoon and seed the tomato halves. I seeded mine into a bowl so my cutting board didn’t get too messy. Also, after a while just found that using my hands was a more efficient way of seeding but you can do it either way.

Once you’re done seeding, half each piece and dice.

Voila, you have diced tomatoes! You can place them in a can and refrigerate if you’re going to use them in the next couple of days or freeze those babies for later.
