This book had such an influence on the way I eat food now. Mark Bittman & David L. Katz, MD paint such a vast picture of the foods we eat today as a society. American culture and the consumption of meat, processed foods, dairy, Macronutrients, Micronutrients, and how our bodies respond to these.

I believe that this book is important to us all. What we’re eating is not the only important thing in this book. They also talk about the way we consume and its effects on the environment. VERY IMPORTANT INFORMATION. This book made me check myself because growing up I had meat or seafood with every meal of the day, and sometimes just as a snack. Not once were there ever just veggies, whole grains, and beans as a meal.

I started following the diet that they talk about in this book. A balanced diet is the best diet. It made me cut meat out from my diet as often as I was eating it. I am finding myself now maybe eating meat once a month or so and in small portions. When I do eat “meat” I usually choose a fish vs. beef. Even some of the “healthier” options I was choosing to eat are slightly debunked a bit. I also upped my fruit game a lot, especially when I have a sweet tooth other than my occasional dark chocolate power berries from TJ’s.

In the end, this was a very eye-opening book for me. I have found that I am more of a flexitarian in the end. I am open to eating most things in moderation. But I am going to let you decide for yourself after you go out and buy this book. I’m not lying when I say that I did shed some pounds after changing my diet. But the more important part is that I feel healthy and I am doing a solid for the environment.
